Yamaiomo also known as dioscorea japonica is a potato-like vegetable, which has been cultivated and consumed in Japan for centuries. It is mainly eaten uncooked in chopped form. It has characteristic sticky and slippery texture, which Japanese like to mix with soba, miso, natto and many other dishes. Yamaimo has no distinguishable taste. It is especially valued for its texture and nutritional values such as fiber, minerals, vitamins B and C.
