As a result, in laboratory conditions, monosodium glutamate was soon created, the source of the umami flavor, naturally present in many food products and in the bodies of mammals - including humans!
Monosodium glutamate is not only an important neurotransmitter and a key component of breast milk. The Japanese physician of the Tokyo Imperial University, Miyake Hiizu, argued that the attractive taste of glutamate has a great impact on human appetite and stimulates digestion.
