Dashi だし, or Japanese broth, is not only the basis of countless Japanese soup-based dishes such as ramen, miso soup, shabu shabu, and chawanmushi - dashi is considered by many to be the essence of Japanese cuisine and Japanese flavor. Dashi remains an indispensable ingredient in Japanese cuisine thanks to its exceptionally rich umami flavor, which is usually derived from dried katsuobushi flakes (dried smoked bonito flakes) and kombu seaweed.
Umai Dashi Agoiri is an authentic Japanese dashi made of Japanese bonito fish and Kyūshū-caught flying tobiuo fish, also known as ago. Yakiago, i.e. baked and dried ago fish, which in recent years have been a popular ingredient in ramen broths, can also be found in the composition of this dashi.
