Description

Kimura pickled radish Takuan with Bonito Flavor, 280g

Traditional Japanese takuan, a pickled daikon radish made from locally grown daikon cultivated in regions suitable for takuan production. The radish is first salted and then aged for an extended period in a specially prepared rice bran mixture, allowing it to undergo natural lactic fermentation. The producer uses its own three-stage pickling method, including initial pickling, turning the radish and immersing it again in the pickling mixture, followed by the final pickling stage. This process gives the takuan a deep flavor and a pleasantly crunchy texture.

Katsuo pickled radish Takuan with Bonito Flavor is distinguished by the addition of bonito (katsuo) flavor, which enhances the natural umami of the takuan and gives it a richer, more pronounced character. It is ready to eat straight from the package without rinsing. For the best taste, chill the takuan well before serving and slice it into pieces approximately 3–4 mm thick to preserve its pleasant crunch.

Takuan is traditionally served as an accompaniment to rice and main dishes, offering a refreshing bite between mouthfuls. It is also delicious with a traditional Japanese breakfast, donburi, or other dishes where you want to add the distinctive flavor and texture of Japanese tsukemono (snacks).
