Kuzu is a Japanese plant starch obtained from the roots of the wild plant of the same name. It is the result of traditional production, and therefore it is not subject to fast processing or bleaching processes. It has strong thickening properties and becomes transparent when dissolved in water. It is mainly used to thicken dishes - soups, sauces and desserts. It has a neutral taste and smell, so it affects the dish only on the consistency level. It is also the main ingredient of kuzumochi - a jelly-like dessert served with kinako soy flour and brown sugar syrup.
In addition to its wide use in the kitchen, kuzu also has unique healing properties. It is a rich source of iron, calcium and phosphorus, and thanks to the flavonoids content, it soothes stomach discomfort. In Japan, it is also used to treat allergies, fever, hypertension and nausea.
