Description
Commonly known in Japan as Ginnan - ginkgo nuts have a delicate flavor and a floury texture, somewhat reminiscent of boiled broad beans.
At the beginning, a sweetish taste dominates, which then gives way to a bitter aftertaste, somewhat similar to that appearing in mussels. Usually they are not eaten raw and more often added to various dishes in fried form.
They go well with, for example, chawanmushi (cream with eggs based on dashi broth) or salads.
