Japanese Cucumber Salad (Kyuri no Sunomono)
Ingredients (for 2 servings):
- 1 cucumber (preferably Japanese or snake cucumber)
- 1 teaspoon salt
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon soy sauce
- A few drops of Kadoya sesame oil
Preparation:
- Cut the cucumber into very thin slices, mix with salt and set aside for 10 minutes, then drain the cucumbers.
- In a separate bowl, combine the rice vinegar, sugar and soy sauce and mix with the cucumbers.
- Finally, sprinkle everything with a few drops of Kadoya sesame oil and done!
