Mentai, or mentaiko, is a chili-marinated cod roe that has a characteristic sea-spicy flavor. Mayo, or mayonnaise (especially from Kewpie), is one of the favorite sauces and additives of the Japanese, which is known for its creamy texture and the distinctive flavor of egg yolks. Together, these ingredients make a tasty and uniquely Japanese combination.
