Kombu Tsuyu no Moto by Ninben is a concentrated, fully vegan tsuyu bouillon sauce made from a combination of salty soy sauce, dried kombu seaweed from Hokkaido Prefecture and dried shiitake mushrooms. It is an extremely versatile sauce with a distinctive, dry flavor with notes of sweetness, which, when diluted in the right proportions with water, will be the flavor base for countless Japanese dishes.
What to use for?
- as a hot soup for udon or soba noodles (kaketsuyu): 1 portion tsuyu for 7 portions of water
- as a dip for cold udon or soba noodles (tsuketsuyu): 1 portion tsuyu for 2 portions of water
- as a dip for tempura (tentsuyu): 1 portion tsuyu for 3 portions of water
- for Nabemono: 1 portion of tsuyu to 9 ~ 10 portions of water
- as a salad dressing: 1 portion tsuyu for 2 portions of vinegar and 3 portions of olive oil
