Dashi だ し, or Japanese broth, is not only the basis of countless Japanese soup-based dishes such as ramen, miso soup, shabu shabu and chawanmushi - dashi is considered by many to be the essence of Japanese cuisine and Japanese flavor. Dashi remains an indispensable ingredient in Japanese cuisine thanks to its exceptionally rich umami flavor, which is usually derived from dried katsuobushi flakes (dried smoked bonito flakes) and kombu seaweed.
Kantan Kizami Kombu Dashi from Oguraya is a convenient, fully vegan dashi broth prepared from natural kombu seaweed. The package includes as many as 3 types of kombu, which have been finely shredded in advance, thanks to which the preparation of the broth takes less time, and the resulting dashi is 10% denser. The seaweed used to prepare the broth can be reused, this time as an ingredient in salads and other dishes.
10g of shredded kombu seaweed per liter of water will result in a strong, aromatic and thick dashi stock, while 5g per liter of water is more for everyday use. Pour a liter of soft water into the prepared amount of seaweed, put it in the refrigerator and wait 40 minutes, or pour a liter of boiling water and wait 5 minutes.
